Rice/ Quinoa with Biryani Masala Blend


 

 

Vegetable- Nuts Rice with Biryani Masala Blend
        (For two)
 
Ingredients:
½ cup frozen peas
2 cups of chopped vegetables like carrots, yellow/red pepper/green beans/cauliflower (can also add meat or seafood in the mix)
1 medium peeled and chopped onion (red or yellow)
2 medium tomatoes --chopped.
½ cup of dry nuts like cashews and raisins (optional)
1 cup rice (any kind) wash it multiple times until the water starts looking clearer.
2 cups water
1 tsp melted ghee or butter (optional)
1 tsp of Biryani Masala Blend (if meat is added then add ½ tsp of blend more)
Salt - add as needed.
 
Step by step recipe
Add the washed rice and water in a pan or cookware. Add salt if desired.
When the water starts to boil, put the flame on medium. Cook until rice is soft, and the water evaporates.
Meanwhile in a separate pan
Sautee onion until they are golden brown.
Add tomatoes and all the vegetables and peas. Cook on medium flame until they are soft and cooked.
Add dry nuts and 1 tsp of biryani masala blend.
Stir everything once and let it cook on low flame for 1 minute.
Add the cooked rice to the mix. Gently mix all the ingredients.
Add melted ghee or butter on top and gently stir the mix. (optional)
Turn off the flame. Cover the skillet for 2 minutes for all the ingredients to sweat and steam.
Enjoy with yogurt or serve on a bed of lettuce.
